Illinois has enacted a new law aimed at improving food safety for residents with Celiac Disease. The legislation, sponsored by State Senator Sally Turner (R-Beason), mandates that all food handlers in the state receive training on Celiac Disease and the proper handling of gluten-free foods. It also updates allergen awareness standards by adding sesame as a recognized major allergen and requires education for food workers about the risks associated with gluten exposure.
“I am thrilled to see this legislation officially signed into law,” said Senator Sally Turner. “This is about protecting the health and safety of people who live with celiac disease every day. Proper training can help reduce the risk of cross-contamination and make our state more accommodating for those with serious dietary needs.”
Celiac Disease is an autoimmune disorder that affects about 1 in 100 people worldwide. Those affected can suffer severe reactions from even minimal amounts of gluten. The new law’s required training covers symptoms, cleaning procedures, preventing cross-contact, and accurate labeling of gluten-free menu items.
“Food safety should include everyone, especially those with medically necessary dietary restrictions,” continued Senator Sally Turner. “This new law is a simple, practical step that can make a big difference for so many families across Illinois.”
Senate Bill 1288 passed both chambers of the General Assembly without opposition and was signed by the Governor on August 1.
Turner was elected to represent Illinois' 44th Senate District in 2021 after succeeding Bill Brady as state senator.
